No way! Way!

So this is the day's highlight in my exciting life: Spinach lasagna. The highlight is that I actually made it myself (got out of school today at 4, so I had time to cook!), without a recipe, and it tastes pretty good! Hooray for small victories. It's only one small step from here to filet mignon.

In other news: The new classroom assistant started today in kindergarten, and it was so nice not to have to run after certain kids all of the time! And to eat lunch with someone! And to bounce ideas off of another person! Clearly, as demonstrated by the overabundance of exclamation points, I've been alone in that class for far too long. But I think the learning center system is finally starting to work; the kids have the routine down and basically know what is expected of them. I have to work a little harder to come up with more interesting activities, so there's the next goal. Right after writing the play, somehow getting the kids to memorize it, and pulling it off...in less than three weeks. Woo!

But now it's 7.20 and I have some FREE TIME (sure sign of the apocalypse), so it's time to watch some TV and perhaps 'Wayne's World.' Again. Excellent!

See, it had to get better! I knew it couldn't stay horrible and wretched and stressful for the whole year. Yay for assistants!

And that lasagna sounds deeeeelish! Recipe?

Not much of a recipe, but here it is:
(1) Cook 9 lasagna noodles.
(2) Cook 1 package of frozen spinach.
(3) Mix a container of ricotta chesse with 1/2 bag of shredded mozzarella, some grated Parmesan, some oregano and parsley, and cooked spinach.
(4) Spread 1/2 c. tomato sauce in bottom of a greased 11X7 pan. (13X9 would definitely work better, but 11X7 is all I have)
(5) Layer noodles, cheese mixture, then tomato sauce 2X.
(6) Top with remaining noodles, small amount of sauce, rest of mozzarella cheese and some more graded Parmesan.
(7) Bake uncovered at 350 degrees for 40 minutes.
(8) Let stand 10 minutes.
(9) Eat!

Err, 'grated', not 'graded' Parmesan. Either I have a subconscious cold, or I think too much about school.

Sounds amazing! Too bad no one in my family ('cept for me) eats spinach. I could even go for some spinach pizza, or something. Mmmm. I think I'm going to re-post this recipe on my blog for posterity. And so I don't have to copy it down yet :)
